Not surprisingly, red wine brings together a complicated mix of antioxidants and other compounds, one of which is a polyphenol known as resveratrol that is showing itself to have some amazing disease prevention abilities.

The health benefits of this substance are certainly impressive, everything from preventing cancer to protecting the brain and heart from damage and age-related diseases, reversing diabetes, reducing "bad" cholesterol, preventing blood clots, obesity and more.

But by far the most fascinating tidbit is the way the body gets the beneficial compounds.

It appears that absorption of resveratrol through the mucous membranes in the mouth results in around 100 times the blood levels of the compound than a drinker would get via the digestive system and liver.

These body systems inactivate this helpful substance, so those gulped down glasses don't deliver the resveratrol to the bloodstream.

Sips that are slow and savoring work far better allowing the absorption of this oh-so-beneficial compound.

Though it sounds complex and convoluted, experts have found that high doses of resveratrol increase a process called apoptosis (programmed cell death); while lower doses are thought to improve cardiac health by preventing cell damage.

A likely explanation for this level dependent effect is that smaller concentrations of the compound activate cell survival mechanisms, while high concentrations turn on built in death signals in those same cells.

The compound might also help maintain health by removing very reactive oxidants in the body while aiding the supply of blood to cells.

"The simplest explanation is that resveratrol turns on the cell's own survival pathways, preventing damage to individual cells," explains study author Brown. "Further mechanisms help, including removing very reactive oxidants in the body and improving blood supply to cells."

Calcium often gets all the glory when it comes to bone health. But calcium wouldn't benefit your bones much without its partner, vitamin D!

Why? Vitamin D helps your body absorb calcium and keeps your bones strong; without enough vitamin D, the bones become weak and brittle, a condition called rickets in children, and osteomalacia in adults. Adults from 19 to 50 need 200 IU (international units) per day, while those from 51 to 70 need 400 IU daily. Those over 70 need 600 IU per day.

Unfortunately, not too many foods contain vitamin D naturally. (Tuna and sardines canned in oil are exceptions.) The good news is that many foods are now regularly fortified with vitamin D, including milk, some yogurts, margarines, and cereals. You can check the Nutrition Facts panel on packages and containers to see which products contain vitamin D. It should be listed after vitamins A and C, along with the percentage of the Daily Value that a serving of the food contains. The Daily Value (a standardized amount) for vitamin D is 400 IU, so if your milk has 25 percent of the Daily Value, it provides 100 IU per serving.

Your skin can also make vitamin D using sunlight — you need about a half hour of exposure to the midday sun twice a week to make enough. However, because of the increasing incidence of skin cancer in recent years, many experts are wary about recommending sun exposure.

So take a closer look at milk, yogurt, cereal, and margarine selections when you're doing your weekly shopping, and stock up on brands that are fortified with vitamin D. Challenge yourself to consume one source of vitamin D at least three days in the coming week! If you cannot eat or do not like any foods that contain vitamin D or are fortified with it, talk with your health care provider ASAP about taking a supplement. Your bones will thank you for it!

Eat Right

We all face challenges as we try to improve our lifestyle! If you started out great but have stopped measuring your portions or keeping your Food Log, don't worry! These are common challenges, and you can overcome them!

To get back on track, let's get back to basics.

  • Portions count. Remember that the key to sensible portions is right in your kitchen cabinet! If you've stopped measuring, it's good to revisit your bowls — think of them as measuring tools and not just a means to get your amazing dinner on the table!
  • Choose the right foods. I know how easily fattening snacks, junk food, and soda can sneak back into your diet. If it's just one food, try taking it out of your cabinet. Sometimes just eliminating the temptation — throw it away, put it out of reach, don't buy it again — can make a big difference!
  • Get moving. Exercise is the absolute best way to jump-start your weight loss! Even a few minutes counts! Take a short walk, stand while you talk on the telephone, walk instead of drive to a nearby store. These simple activities can give you energy and make you feel great!
  • Get motivated. "You're doing a great job!" Sometimes hearing those words is all it takes to get you back on track! Have you tried visiting my Message Boards? Lean Mean Protein

Did you know that making one small change in your diet can help you lose more than 6 pounds a year? Just by choosing a lean piece of meat over a high-fat one each day — skinless chicken breast over the same amount of prime rib, or 95 percent lean ground beef over 85 percent lean — you can do just that.

The small savings in calories you'll make by replacing high-fat sources of protein in your diet with lower-fat ones daily can really add up over the course of a year — and make the numbers on the scale go down. And if you think that leaner cuts of meat are less interesting or flavorful, think again! For instance, many "wild" meats, such as venison, buffalo, and elk, are incredibly lean and flavorful.

And when you're looking for lean sources of protein, don't forget about eggs. They're low in calories and fat and rich in B vitamins, vitamins E and A, and choline. As for their high cholesterol content, it turns out that eggs may have been unfairly maligned. Doctors now know that dietary cholesterol doesn't influence your blood cholesterol nearly as much as saturated and trans fats do. Since an egg has just 5 grams of fat (1.5 grams of saturated fat), one whole egg a day can fit neatly into a healthy low-fat diet.

Start lightening up your diet today by replacing one high-fat protein source with a lower-fat one. Make the change permanent, and you may soon start feeling lighter yourself.

Asparagus with mixed vegetables

This asparagus recipe combines asparagus with other vegetables in an easy stir-fry. In this asparagus recipe, the "speers" remain bright green and still crispy, never soggy or limp. Cook Time: 5 minutes

Ingredients:

  • 1 bunch fresh asparagus
  • 1 carrot, sliced into matchstick-like pieces
  • 4 spring (green) onions, cut into 2-inch lengths (including green stem)
  • handful of fresh shiitake (or other type) mushrooms, sliced
  • 1-2 cups fresh bean sprouts
  • 1 red bell pepper, de-seeded and sliced into thin strips
  • 2-3 Tbsp. sherry or cooking sherry
  • canola oil (or other healthy oil) for stir-frying
  • STIR-FRY SAUCE:
  • 3 Tbsp. oyster sauce (or vegetarian oyster sauce)
  • 1 Tbsp. fish sauce (or vegetarian fish sauce) + more to taste
  • 2 tsp. brown sugar
  • 1 tsp. fresh minced red chili (OR dried chili flakes, OR chili sauce (omit for mild, or add more for spicy-hot)
  • optional: 1 tsp. shrimp paste
  • 2 tsp. sesame oil

Preparation:

  1. Rinse asparagus, then snap off the ends (these will snap off easily in just the right place, leaving only the tender stalks behind). Discard the ends, juice them, or add them to homemade chicken stock.
  2. Prepare all other vegeatables and place them in separate piles near the stove.
  3. Make the sauce by stirring all sauce ingredients (except the sesame oil) together in a cup. Stir well. Set the cup beside the stove.
  4. Heat 2-3 Tbsp. oil in a wok (or large frying pan) over medium-high heat. When oil is hot, add the asparagus and stir-fry 1 minute.
  5. Add the cooking sherry plus the carrots and mushrooms. Stir-fry another 1-2 minutes, or until mushrooms are cooked.

    Tip: When wok/pan becomes dry, add a little water instead of more oil (1 Tbsp. at a time).

  6. Add the spring onions and bell pepper. Stir-fry 1 more minute.
  7. Finally, add the bean sprouts plus the sauce. Stir-fry to combine (30 seconds to 1 minute).
  8. Remove from heat and drizzle the sesame oil over. Toss to combine.

    Tip: Sesame oil is one of the "healthy oils", but if it is heated, it loses all its nutritional value. So be sure to drizzle it over the vegetables at the end, when your stir-fry is done.

  9. Taste test the vegetables for salt and sweetness, add more fish sauce (1 tsp. to 1 Tbsp.) if not salty enough, or a little more sugar if too sour.

    Tip: The asparagus (and other vegetables) should still be fairly crisp and bright in color (aside from tasting better, this means they have retained most of their valuable nutrients too!).

  10. Serve hot from the wok. May be eaten as is, or with Thai jasmine rice. Enjoy

Beef and Asparagus

ngredients:

  • 1 pound fresh asparagus
  • 1 to 1 1/2 pounds lean beef steak, sliced in thin strips
  • 1 tablespoon oil
  • 2 large sweet onions
  • 1 tsp. cornstarch
  • 1/4 cup sherry wine
  • 3 tablespoons light soy sauce
  • 1/2 teaspoon sugar
  • dash of hot pepper sauce, cayenne, or chili paste, optional

Preparation:

In a non-stick skillet over medium-high heat, add oil and brown steak quickly; meat should be very rare. Remove meat and slice diagonally against grain in thin strips; set aside. Slice asparagus into 1 inch pieces. Quarter onions then cut in thick slices. Combine onions, asparagus, and sherry in skillet. Cover and cook 5 minutes. Stir together cornstarch, soy sauce, sugar and hot sauce or powder if using. Add cornstarch mixture to skillet; cook and stir until mixture thickens. Stir in steak and cook until heated through. Meat should be tender and vegetables crunchy. Serve with rice or noodles.
Serves 4.
